Chicken Biryani Recipe
The recipe is prepared using natural spices and classic procedure.
- 4 tbsp Cooking Oil (vegetable oil preferred)
- 1 chicken skinless, in pieces (as required)
- 2 cardomom crushed/ground
- 3 potatoes boiled, and chopped half
- 1 cinnamon stick
- 2 onions chopped
- 2 tbsp ginger garlic paste
- 1/2 tsp chili powder
- 1 pinch saffron powdered
- 1/2 tsp turmeric powder
- 3-4 cloves whole
- 1 tsp Salt
- 2 tomatoes chopped
- 2 tbsp fresh mint leaves chopped
- 1 pound Rice Basmati preferred
- 1 tsp Black Pepper
In a skillet, add 2 tablespoons of Oil and fry onion, until onion is soft and golden. Now add peeled/chopped tomatoes and ginger garlic paste along with red chili powder, pepper, turmeric, cumin, and salt. Fry the mixture, stirring constantly for at least 7 minutes.
Now add mint, yogurt, crushed cardamom and cinnamon stick into the mixture. Cover the dish and cook over low heat. Stir occasionally until the tomatoes are cooked into a pulp. It may be required to add a little amount of water in case the mixture becomes too dry and starts sticking to the pan.
When the mixture is properly prepared into a sauce which is thick and smooth, add chicken pieces. Mix well to coat the chicken properly into the sauce.
Cover and simmer at very low heat until the chicken is tender, approximately 35 to 45 minutes. Please note that, the gravy must be little in amount and is thick in texture when the chicken has properly cooked. If required, cook uncovered for a few minutes to reduce the gravy.
Wash rice and in an container keep them in water for at least 30 minutes.
In a skillet add rice, water and salt. Bring to Boil. Keep checking the rice, that they have properly boiled and are soft. When rice are ready, drain in colander.
In a skillet, add saffron, cloves, cinnamon stick, and rice. Mix the spices with the rice properly.
In a medium-size pot, heat the chicken mixture. When the mixture is warm enough, pour it over the rice and mix well. Add boiled potatoes and mix well again.
Serve Biryani with delicious Mint Sauce.
